Warming, filling comfort food for a Minnesota blizzard.


Southern Minnesota and most of the midwest is currently in the midst of the worst blizzard this part of the country has seen in years. When you are snowed in, what do you want to do most? Eat! I made this delicious, filling and very comforting Turkey Mexican soup to fill our bellies last night...


2 cups of Ground Turkey

1 cup of ground Garbanzo beans

1 small onion

1/4 head of finely shredded cabbage

1 garlic clove

2 T Olive Oil

1 cup of salsa

1/2 cup of nacho cheese

1 cup of corn

1 cup of water

1 cup of rice

Tortilla chips


Heat the turkey, beans, onion, cabbage & garlic in the olive oil. Add salsa, cheese, corn & water - bring to boil and reduce heat to simmer for about 20 minutes. Add rice and simmer for another 10 minutes.

Serve with Tortilla Chips for dipping.
